OUR PROCESS

Born in the mountains of Durango, Mexico, it is nourished by a tradition with more than 800 years.

The first step is to select the best agave hearts that grow wild in the mountains, which are then placed in a cooker made of volcanic stones and firewood.

They are covered with soil so that they can be cooked properly. Consequently, they go through a process called milling. In this process, the secret is to obtain pieces of an optimal small size to extract all the sugars.

Finally the product is moved to wooden tanks for their fermentation and bottling.
